Abstract

Daging merupakan salah satu sumber protein hewani yang berkualitas tinggi dimana protein daging mengandung susunan asam amino yang lengkap. Fasciolasis merupakan penyakit yang disebabkan oleh Fasciola gigantica.dan biasanya menyerang hewan ternak seperti sapi, yang menyebabkan menurunnya fungsi hati. Kerusakan hati dapat mempengaruhi struktur dan ikatan protein. Tujuan penelitian ini untuk melihat gambaran profil protein daging sapi yang terinfeksi Fasciolasis. Profil protein daging sapi yang terinfeksi Fasciolasis dianalisis menggunakan metode SDS-PAGE 12%. Desain penelitian ini adalah penelitian deskriptif dengan objek penelitian adalah daging sapi yang terinfeksi Fasciolasis. Hasil penelitian menunjukkan pada daging sapi sehat terdapat banyak pita protein mayor dibandingkan pita protein minor. Sedangkan pada daging yang terinfeksi menunjukkan hasil yang berbeda dibandingkan dengan sapi sehat yaitu pada semua sampel yang terinfeksi terdapat banyak pita protein minor. Sedangkan pita mayor hanya terdapat 2 sampai 7 pita protein. Berdasarkan hasil tersebut menunjukkan bahwa sapi yang terinfeksi Fasciola mengalami gangguan dari fungsi hati sehingga pembentukan protein pada daging ikut mengalami gangguan. Kata kunci : Daging, Fasciolasis, profil protein, SDS-PAGE Meat was one of the source of high-protein which was containing of completely array of amino acids. Fasciolasis was the deases which was caused by the Fasciola Gigantica and it also contaminated the cattle, which decreased the liver of them. The damage of liver could affect the structural and bonding protein. The objective of this research was to know the protile image of cattles protein which was infected by the Fasciolasis. The Profile of cattles protein which was infected by Fasciolasis was analyzed by using SDS-PAGE 12% method. The design of this reserach used descriptive research with the object of the research was the cattles which was infected by Fasciolasis. The findings of the reserach revealed that the healthy cattles consisted of many major of protein bands which was opposited of minor protein. Whereas the infected cattles revealed the different results of the healthy cattle which were as the samples of the research that had been infected there were many minor protein bands. While the mayor bands only consisted of 2 until 7 the protein bands. Based on the findings of the reserach indicated that the cattle which Fasciola-infected would be impaire by the liver function which caused the formation of the protein in the meat would be impaired.
