Abstract

Penelitian ini bertujuan untuk menganalisis pengawet metill paraben (nipagin) dalam selai tanpa merek yang diperjualbelikan di Pasar Pedurungan kota Semarang. Pada penelitian ini untuk mengetahui hasil positif atau negatif pada sampel dengan metode kromatografi lapis tipis (KLT). Jika sampel positif maka dilanjutkan uji kuantitatif dengan metode spektrofotometri yaitu untuk mengetahui banyaknya kadar pengawet metil paraben (nipagin) yang terkandung dalam sampel. Hasil penelitian ini menunjukkan bahwa 13 sampel terdapat 10 sampel tidak mengandung metil paraben (nipagin) dan 3 sampel mengandung metil paraben (nipagin) dengan kadar sampel selai rasa blueberry, rasa selai nanas, dan rasa selai stroberi berturut-turut adalah 591,206 mg/kg, 405,827 mg/kg dan 442,289 mg/kg. Kadar metil paraben (nipagin) menunjukkan hasil yang masih normal untuk dikomsumsi karena tidak melampaui nilai batas penggunaan metil paraben pada selai yaitu 1000 mg/kg menurut Peraturan Menteri Kesehatan RI Nomor 033 tahun 2012. Kesimpulan pada penelitian ini adalah kadar pengawet metil paraben (nipagin) yang terkandung pada selai tanpa merek masih dalam batas normal sehingga selai tersebut masih aman untuk dikonsumsi oleh masyarakat. Kata Kunci : Selai tanpa merek, metil paraben (nipagin) This study aims to analyse the preservative of paraben methyl (nipagin) in unbranded jam traded in Pedurungan Market in Semarang City. In this study to determine the positive or negative results in the sample with thin layer chromatography (TLC). If the sample then continued with quantitative tesh with spectrophotometric method that is to know the amount of methyl paraben (nipagin) preservative contained in the sample. The results of this study showed that 13 samples contained 10 samples containing no metyl paraben (nipagin) with blueberry jam, pineapple jam and strawberry jam were is 591,206 mg/kg; 405,827 mg/kg and 442,289 mg/kg. The methyl paraben (nipagin) content shows the normal results for the consumption because it does not exceed the limit value of methyl paraben in the jam that is 1000 mg / kg according to the Food and Drug Supervisory Agency of the Republic of Indonesia Number 24 of 2013. The conclusion of this research is the level of methyl paraben (nipagin) contained in the unbranded jam that is still within normal limits so that the jam is still feasible for consumption by the public.
