Abstract

Food stalls around Unimus campus 1 are means and facilities to fulfill the nutritional needs for students, lecturers, all employees even for the public. This study aims to find out and evaluate the sanitation of equipment in canteens and food stalls with total test indicators of microbes and Escherichia coli contained in plates, cups, spoons and washing water sources. The type of this research is descriptive qualitative. Population spreads around campus 1 Unimus amounted to 21 food stalls. Sampling by purposive sampling are 6 places, 3 canteens and 3 food stalls. Instruments used are the total plate count test and coliform test, questioner, observation, library Data analysis using frequency distribution test. The conclusions of this study are sanitation facilities, environmental factors and handlers affecting the amount of bacteria in the tableware. The suggestions from this research are improving sanitation facilities and providing training on sanitation of cutlery. Keywords: Food stalls, Sanitation Equipment, Total microbes, Escherichia coli
