Abstract

The cases of borax usage in the food are high in Boja region, Kendal. Borax which is added in the food as preservative will extend the food expired. The purpose of the study is to identify and measure the level of borax of black grass jelly which is sold in Boja market. This research used descriptive method, each sample has analyzed by triplo. This research conducted at the Laboratory of Chemistry, University of Muhammadiyah Semarang during September 2016 until March 2017. The result of qualitative test borax in black grass jelly with flame reaction method, sample A showed the content of borax, while sample B, C, D, did not contain any borax. The quantitative test in sample A with acidimetric method had 874.53 mg / kg level. It indicated that the level did not surpass safe level 1000 mg / kg of food material.
