Abstract

Noodle crackers is a snack interested by many people. However, there was concern about possibility of the use of colored agent of azo dye methanyl yellow, in the making of noodle cracker, which is already prohibited by government. At Demak there has been no report about identification and determination of azo dye methanyl yellow in noodle crackers. The purpose of this research was to identify and to determine the level of azo dye methanyl yellow in samples of noodle crackers sold at Mranggen market Demak District. The object of this research was noodle crackers obtained by accidental sampling from 7 traders that found ot the Mranggen market. In this research, a qualitative analysis method used was thin layer chromatography (TLC), while the quantitave analysis method used was visible spectrophotometry. The results showed that results showed that 1 of 7 samples cracker noodles with code no. 1 was identified to contain methanyl yellow with at level of 3604,76 ppm. As conclusion, sampel with code no. 1 did not conform with Indonesian food regulation as stated on decree of Health Minister of Indonesia No. 033 of 2012.
